You may not be able to put your finger on why you do, but you just know it when you step across the threshold of somewhere that’s about people not profit. The ethical entrepreneur Geetie Singh-Watson had loved this historic yet run-down pub in her adopted home town of Totnes for years before she finally got her hands on it. She certainly didn’t have anything to prove.

In 1998 she had defied the odds and flat-Earthers to open the Duke of Cambridge in London as the world’s first certified organic pub. She has also been awarded an MBE for her services to the organic pub trade. However, the idea of turning this characterful inn back into a community hub — and an organic hotel to
